Fruity Cereal Waffle Cone
Ingredients
7 egg whites
3 cups sugar
1/4 cup water
1/2 cup butter, melted
1/4 cup heavy cream
1/2 teaspoon salt
1/8 teaspoon lemon oil
2 1/4 cups all-purpose flour
1 cup Fruity Pebbles cereal, plus extra for sprinkling
Nonstick cooking spray
Directions
- Using a stand mixer with a paddle attachment, beat together egg whites and sugar until the sugar is completely dissolved. Switch the mixer to low and add water, melted butter, heavy cream, and salt. Mix thoroughly. Finally add the lemon oil and mix until incorporated.
- Next add the flour in three batches, making sure each addition is fully incorporated before adding the next. Turn the mixer off and fold in the fruity cereal by hand.
- Spray a waffle-cone maker with nonstick cooking spray and heat to medium. Spoon a heaping spoonful of batter one at a time onto the waffle-cone maker and sprinkle a little more cereal on top. Make the waffle cones according to manufacturer’s instructions, baking to the desired color and doneness. Roll the flat waffle into a cone shape while it is still warm using a cone or krumkake roller.
- Let cool until crisp and then serve with your favorite ice cream.
