The Quickest, Most Delicious Vegetarian Chopped Salad You’ll Ever Taste

Every once in a while, I put together a recipe that is both totally unexpected and completely satisfying. I’m talking about “everything but the kitchen sink” meals, and this chopped salad is definitely one of these!

We’ve all have experienced those evenings when the thought of planning and making dinner has you coming up blank. In an effort to avoid frozen meals or delivery, I’ll be sharing a few of my favorite quick fix meals to keep you feeling happy and healthy!

Jicama, Avocado and Onion Chopped Salad

Ingredients

3 cups romaine lettuce, chopped
1/2 cup cherry tomatoes, cut in halves
1/2 avocado, chopped
1/3 cup red onion, chopped
2 green onions, diced
1/3 cup jicama, diced
1/4 cup shredded cheddar cheese
1 lime

Directions

  1. Gather all your fresh produce. Add your greens to a bowl first, then add your chopped toppings in rows (as shown). This is great for dinner parties or for those more impressed by beautiful food.
  2. Squeeze lime over the top of all ingredients and add a few dashes of pepper. Or whip up a quick and easy dressing vinaigrette.
