Vegetarians, we feel your pain. Staples we grew up with like arroz con pollo, ropa vieja, and meat stew all have one thing in common: meat. But that doesn’t mean there aren’t delicious Latin recipes out there. In fact, now that the Catholic Lenten season is beginning and a large majority of Latinos around the world will be observing meatless Fridays for the next six weeks, they’re in high demand.
