Growing up in Texas, I lived off of Tex-Mex. I’ll go so far as to say I had it nearly once a day. What is Tex-Mex exactly? It’s sort of a hybrid cuisine between Southwestern (aka cowboy/rancher) and Mexican. There’s an emphasis on beans, cheese, beef, and flour tortillas. Chili, nachos, queso dip, fajitas, enchiladas, and burritos are all quintessential Tex-Mex dishes. It’s equal parts comforting, indulgent, sizzling, and cheesy-gooey.
